In the woods of Piedmont and Valle d'Aosta, between June and July, we harvest organic Chestnut Honey, as the beginning of summer corresponds to the plant full bloom. The inflorescences of this plant variety feed the bees who are fond of its nectar.

Chestnut organic honey - made in Italy

Origin: Piedmont and Aosta Valley
Harvest period: june - july
Consistency: Chestnut Honey is rich in fructose and goes through a very slow crystallisation process. For this reason, it has a liquid, soft and delicate consistency.
Colour: The shades of Chestnut Honey vary from dark Baltic Amber to walnut wood and mahogany red.
Taste: At the first taste, a surprising bitter note reaches the palate. Slightly astringent, Chestnut Honey offers a tannic and rebel taste, which persists through a coherent aftertaste, with traces of carob and bitter cocoa beans.

Flavour: In line with its pungent and intense scent, Chestnut Honey aroma gives to the palate a characteristic smell, recalling a bitter chemical sensation, mostly tannic and phenolic. It presents a pleasant balance of sweet and bitter notes.

Chestnut Honey matches well with several dishes: cow, sheep and goat cheese, both fresh and ripened, fatty or smoked meats, venison. Due to its slightly bitter taste and liquid consistency, Chestnut Honey is the ideal partner of sweet and savoury doughs: from whole-wheat grains bakery to nut and kaki fruit creams. It is delicious when spread on black bread with lard and walnuts or in combination with craft beers and black tea.

The European chestnut is a heliophilus (meaning “sun-loving”) tree. It presents a broad crown with medium-sized leaves, destined to fall periodically. This long-lived species uses the wind as a vector for pollination, but when the inflorescence is ripe, it can host pollinators. In such way, chestnut male flowers are foraged by bees, which rapidly produce this precious honey.
