Consistency: cherry Honey presents an homogeneous crystallisation, defined as coarse by the experts because of the typical crystals of medium and large size, perceptible on the palate.
Colour: when liquid, Cherry Honey tends to red shades. Otherwise, it shows an intense yellow colour, with slight orange nuances.
Taste: at the taste, this product reflects its scent: strongly aromatic, classified as “chemical” or “animal”. It is a sweet honey, leaving a slightly bitter sensation, recalling the aftertaste of a handful of fresh almonds.
Flavour: the marked aroma spread in the mouth by Cherry Honey is associated to the intense smell of bitter almonds and to the fragrance of cumarine.

Cherry Honey is an ideal sweetener for tea and herbal infusions. It is recommended as well to enrich fruit salads, soft milk creams or fresh cheese. It is a pleasant ingredient of cheesecakes and dry fruit salads, accompanying almonds, cashews and sultanas.
It is a tree characterized by a smooth bark and white flowers with yellow stamens. Wild cherry trees survive, reproduce and expand in nature thanks to bees’ activity in the ecosystems where this species lives. These fundamental pollinator insects perform pollen transport from the male part to the female part of the flower. Without them, in summer, we would not be able to harvest cherries, and in winter, we could not sweeten dry fruit salads.
