Dandelion honey - made in Italy

Origin: northern Italy
Harvest period: April
Consistency: Very fine crystals characterise Dandelion Honey, rendering it a creamy product. It is a homogeneous and compact honey, rich in small grains, easily soluble in the mouth.
Colour: Dandelion Honey presents bright colours, from mango yellow to light amber. It shows an intense yellow when pure, and it becomes lighter, almost beige, when it results from a mixture with other pollens.
Taste: Organic Dandelion Honey recalls an evening camomile infusion, with a slight hint of acid, releasing a fresh and sweet flavour. This product reminds, at the taste, the rind of traditional pasture cheese and blue cheese. Experts describe its strong scent as “valerian” and “animal”, with chemical and acetic notes.

Flavour: The peculiar crystals composing Dandelion Honey allow the perception of a slight freshness on the palate. The surprising use of this honey in the preparation of beverages and dishes is due to its delicate aroma recalling green apples and a penetrating ammoniacal character.

Dandelion Honey bears a marked spirit. It can thus be served in association with bitter and wild dishes, such as chicory salads, meat grilled in the barbecue or on a slate plate.

Blowballs, lion’s tooth or chicory

Taraxacum officinale is an herbaceous plant also known as chicory or “lion’s tooth”, from French “dent de lion”, for the shape of its leaves. It has been used since the ancient times, in alchemy first and, later on, in pharmacy. It represents an attractive species not only for bees, which harvest its nectar, but also for adults and children, who cannot help blowing on the round balls of silver tufted fruits that disperse in the wind. Dandelion leaves can enrich salads as well.
