Thyme honey - made in Italy
Origin: Sicily and Apulia
Harvest period: june - july
Consistency: From liquid and trouble to crystallised, Thyme Honey shows a heterogeneous consistency. Differently from other types of honey, this product crystallises late and quite slowly.
Colour: The shade of Thyme Honey recalls, when liquid, a dark amber ring while it shifts to a lighter colour when crystallised.
Taste: The soul of Thyme Honey presents a spicy flavour, slightly smoked, naturally sweet, softly acid and bitter. Its floral souvenir catches a chemical note, which can recall molten plastic or liqueur wine.
Flavour: The aroma of Thyme Honey fully reflects plant and chemical notes found at the taste and the smell. The aftertaste almost leaves the feeling of having chewed a wooden pencil or tasted a liqueur wine matured in an acid barrel.
